Yellow tea is the least famous, but one of the most fascinating tea families. Yellow tea is an extremely sophisticated tea, so much that originally it was consumed exclusively by the Chinese imperial house, of which yellow was the symbol color. But its name is also linked to its production process: in fact this family is the only one to undergo a phase called “yellowing”. A delicate oxidation in conditions of high humidity that is the basis of its unique aromas. That also gives the leaves beautiful yellow shades.
