The most famous and most consumed in Asia, this tea constitutes over 80% of Chinese production and nearly the entirety of both Japanese and Korean tea production. Green tea, thanks to the panfrying process that stops the enzymatic action, is not oxidized at all, hence its fresh and herbaceous taste, and the extraordinary content of antioxidants such as polyphenols and tannins.
